I am Chef Kobayashi.
My unusual career as both a chef and a circus performer has shaped my unique life journey.

I have traveled to and lived in over 32 countries and more than 131 cities.
In each of these places, I encountered new flavors, aromas, and food cultures,
and each experience brought new discoveries and lessons.

Drawing on these experiences, I strive to bring out the natural flavors of each ingredient,
harmonizing them beautifully in every dish I create.

What impressed me most during my travels is that people’s sense of “delicious” varies greatly depending on the region, culture, and culinary traditions.
By understanding these differences and adapting flavors in a way that resonates with our guests,
I aim to create dishes that are both approachable and deeply satisfying.

I’m MASATO.
I usually work as a Japanese chef at a hotel in Dubai.
During my time off in Japan, I join the ATSUSHI team to further refine my culinary skills.

In Dubai, where many residents are Muslim, I focus on developing Japanese cuisine that is suitable for halal dining.
By incorporating spices and herbs, such as za’atar, I create unique flavors that blend the traditions of Japanese cuisine with my own original touches.

Drawing on these experiences, I work alongside other talented and experienced chefs at ATSUSHI to constantly improve our skills and deliver original dishes that surprise and delight our guests.

I hope you enjoy my creations and experience the joy and excitement in every dish.

ADACHI

My name is Adachi, and I’m from Fukui, a neighboring prefecture of Ishikawa.
Fukui is known for its soba noodles and crabs, and I have grown up enjoying the region’s delicious local ingredients.

Before joining ATSUSHI, I worked at a well-known udon restaurant, where I thoroughly learned traditional Japanese culinary techniques, including soba making, tempura, and dashi preparation.
Here at ATSUSHI, I am further expanding my skills by learning sushi.

Building on these experiences, I strive to bring out the natural flavors of each ingredient and deliver dishes with care, sharing the true appeal of Japanese cuisine with our guests.

Hello, I’m SIMA, and I’m from Nepal.
My father is a chef, and I grew up watching him work from a young age.
I have always dreamed of seeing different countries, and to fulfill one of those dreams, I came to Japan.

Here in Japan, I joined the ATSUSHI team to further develop my culinary skills.
One of my dreams is also to open my own restaurant in Nepal.
I hope to use the experience and techniques I gain here to create a restaurant in my home country, sharing dishes that bring joy to many people.

I’m ARISA. I am currently studying International Communication at Kanazawa University. Working as a floor staff member at this restaurant gives me the wonderful opportunity to meet guests from all over the world. I am originally from an area near Tokyo, so I can also share information about tourist spots there as well as my personal recommendations for sightseeing in Kanazawa.

Hello, I’m Chef TEO. I grew up in a household that enjoyed growing vegetables in our own garden, going mushroom hunting in the mountains, and fishing for fresh fish in the lake. For me, a delicious dish is one that allows you to savor the natural flavors of the ingredients. I use minimal seasoning to bring out the true essence and texture of the ingredients themselves. Pursuing this type of cooking led me to discover Japanese culinary techniques and ingredients, which further expanded my interest and passion for cooking.

I invite you to try my dishes and experience their unique flavors for yourself. Currently, I am also learning the traditional Japanese method of brewing Doburoku sake at a shrine in Nakanoto. Please support me in this endeavor.
