私はシェフの小林です。
シェフであり、サーカスのパフォーマーでもあるという少し変わった経歴が、私の唯一無二の人生を形づくってきました。
これまでに32か国、131を超える都市を旅し、暮らしてきました。
その一つひとつの場所には、新しい味や香り、食文化との出会いがあり、
そのたびに新たな発見と学びを得てきました。
これらの経験を踏まえ、素材が持つ本来の魅力と味わいを最大限に引き出し、
それを美しく調和させて一皿に表現することを心がけています。
世界各地で学んだ中で特に印象的だったのは、
地域や民族、食文化によって「美味しい」と感じる味覚が異なるということです。
その違いを理解しお客様に寄り添った味にアレンジすることで、より親しみやすい料理になってほしいと考えています。

私はMASATOです。
普段はドバイのホテルで日本料理のシェフとして働いています。
日本に帰国した休暇の間は、ATSUSHIチームに加わり、料理の技術をさらに磨いています。
ドバイでは、イスラム教徒の方々も多く暮らしているため、ハラールに配慮した日本料理の開発に力を注いでいます。
スパイスやハーブ、例えばザアタルなどを取り入れながら、日本料理の伝統的な味わいを生かしつつ、独自の風味を生み出しています。
そうして培った経験と工夫を活かし、ここATSUSHIでは、他の経験豊かなシェフたちと互いに技術を高め合いながら、皆さまに驚きと楽しさを感じていただけるオリジナル料理をお届けしています。

私は安達です。隣県の福井県出身です。
福井は、そばやカニで有名な食の宝庫で、幼い頃から地元の美味しい食材に親しんできました。
ATSUSHIに来る前は、有名うどん店で働き、そば打ちや天ぷら、出汁の取り方など、伝統的な和食の技術をしっかり学んできました。
ここではさらに料理の幅を広げるために寿司を学んでいます。
これまでの経験を活かし、素材の味を大切にしながら、丁寧な仕事で料理の魅力をお客様に届けられればと思っています。

私の父はシェフで、幼い頃からその仕事を間近で見て育ちました。

Hello, I’m Chef TEO. I grew up in a household that enjoyed growing vegetables in our own garden, going mushroom hunting in the mountains, and fishing for fresh fish in the lake. For me, a delicious dish is one that allows you to savor the natural flavors of the ingredients. I use minimal seasoning to bring out the true essence and texture of the ingredients themselves. Pursuing this type of cooking led me to discover Japanese culinary techniques and ingredients, which further expanded my interest and passion for cooking.
I invite you to try my dishes and experience their unique flavors for yourself. Currently, I am also learning the traditional Japanese method of brewing Doburoku sake at a shrine in Nakanoto. Please support me in this endeavor.
